In general, boneless, skinless chicken breasts areā¦ not so good. They have an unfortunate tendency to taste a little dry and rubbery, which is why I almost always use the bone-in, skin-on variety whenever possible.
This recipe is one exception…
Herb Grilled Boneless, Skinless Chicken Breasts
Prep time: 15 minutes
Cook time: 10-15 minutes
Serves: 4
Ingredients:
1/3 cup fresh basil
1/3 cup fresh mint
1/3 cups fresh cilantro
4 tablespoons fresh grated ginger
2 tablespoons low-sodium soy sauce
2 tablespoons sesame oil
2 tablespoons brown sugar
pinch, red chili flakes
4 boneless, skinless chicken breasts
Directions:
- Add first 8 ingredients in a food processor or blender and combine throughly.
- Place chicken breasts in a large glass casserole dish without overcrowding or overlapping. Pour herb mixture over the chicken and flip each piece once to coat thoroughly.Cover and marinate for at least 1 hour to overnight.
- Brush grill with oil or spray with non-stick spray. Preheat grill to medium-high heat. Add chicken breasts and cook until done, about 5-6 minutes per side. Serve immediately with your favorite roasted or grilled vegetables on the side. Enjoy!
